For the Crust :

  • 180g of Biscuits
  • 100g of unsalted melted butter

For the filling of Cheesecake:

  • 2 tsp of Gelatin
  • 2 tsp of Lemon juice
  • 1/2 cup of water
  • 100g of unsalted melted butter
  • 1 cup of whipping Cream
  • 1 cup of Cream cheese
  • 3/4 cup of powdered sugar

For Cheesecake topping :

  • 200g of Blueberries
  • 3 tbsp of sugar
  • 2 tsp of Lemon juice
  • 1 tsp of Gelatin
  • 100ml of water

Directions :

Make the Crust :

  1. Let’s begin by blending 180g of biscuits in a blender, and blend it roughly.
  2. Then, transfer it to a bowl, upload the melted butter to it, and mix well until you have a combined mixture.
  3. Transfer it into a pan, and spread it equally. Then, refrigerate for about 30 minutes.

Make the filling:

  1. In a large bowl, add the whipping cream, and beat by using a hand mixer until you get soft peaks.
  2. In another bowl, upload the cheese cream and beat it until smooth and light, then add to the mixture powdered sugar, and mix until nicely combined.
  3. After that, add 2 tsp of lemon juice, and mix it. Then, add the whipping cream and mix it all together until smooth.
  4. In a pan, pour 100ml of water with 2 tsp of Gelatin. Then, on low heat, melt the gelatin for a few seconds. Upload it to the combination and keep blending all the ingredients together.
  5. Pour the filling into above the crust, tap it gently to remove any air bubbles, and refrigerate for about 4 to 5 hours.

Make the Topping:

  1. At the same time, in a saucepan, add 200g of blueberries, 100ml of water, 3 tbsp of sugar, 2 tsp of lemon juice, and 1 tsp of gelatin. Cook for about 5 to 6 minutes on low heat.
  2. Then, remove it from the fire, pour the cooled sauce over it, and refrigerate for 2 hours.
  3. Finally, serve and enjoy!
