Ingredients :

Macarons :

  • 2 large white eggs
  • 1/4 cup of granulated sugar
  • 80 g of almond flour (3/4 cup)
  • 3/4 cup of powdered sugar
  • 1 tsp of vanilla extract
  • 1 or 2 drops of red gel coloring

Egg yolk buttercream :

  • 2 egg yolks
  • 1/4 cup of granulated sugar
  • 1/4 cup of Milk
  • 1/4 tsp of salt
  • 1 cup of unsalted butter
  • 1 tsp of vanilla extract

Directions :

Macarons :

  1. First, divide 2 whole eggs in two bowls, place the egg white into one, and the yolks into another one.
  2. Cover your egg yolks and put them in the fridge in order to use them later.
  3. In a large bowl, pour the egg white and beat well to make a meringue, or until foamy. Then, gradually upload 1/4 cup of granulated sugar and mix at high speed. When the meringue is ready, beat at low speed lastly.
  4. Stiff and add 80g of almond flour, and 80g of powdered sugar, and mix until nicely combined. Then, add 1 tsp of vanilla extract and red gel coloring. And mix well until the meringue is at the stiff peak stage.
  5. The peak should form when taking the beater away, but the tip shouldn’t fall down. Also, you should be able to tip the bowl on top of your head or just upside down without anything falling out.
  6. Then, scoop the macaron batter into a piping bag, fitted with a round tip. And pipe your macarons onto a lined baking sheet, it’s crucial not to grease the pan. In order to stop the macarons from moving around on the tray.

Gradually augment the temperature of the yolk combination while stirring continuously. Don’t boil it. It shouldn’t be too thick. Remove from the heat, add 1 tsp of vanilla extract and mix well. Let it cool completely.
  2. Put 1 cup of unsalted butter in another bowl, and loosen it. Then, gradually upload the cooled mixture of the egg yolk and mix it all together.
  3. Then, pipe about 1 tbsp of buttercream onto half of your macrons, and top with the second half. And your macarons are ready to be eaten.
