We will begin by making the tart shells. Then, we will prepare the pastry cream and decorate it with some fresh fruit on top.
These mini fruit tarts are so fresh, tasty, and simple to make. Your kids will enjoy them.
Ingredients:
Tart Shells :
- 1 cup of all-purpose flour
- 1/3 cup of softened butter
- 2 tsp of sugar
- 1 tsp of vanilla extract
- 1 large egg yolk
Pastry cream :
- 2 large yolks
- 2 tbsp of sugar
- 2 tbsp of cornstarch
- 3/4 cup of full-fat milk
- 1/4 cup of whipping cream
- 1/2 tsp of salt
- 1 tsp of vanilla extract
Directions :

Tart shells :
- In a large bowl, add 1/3 cup of softened butter with 2 tsp of sugar, and mix it all together until sugar dissolves.
- Then, add 1 large yolk, and 1 tsp of vanilla extract. Mix until nicely combined.
- Next, add 1 cup of all-purpose flour, and keep mixing until all the ingredients are combined.
- Roll the dough between parchment paper and chill in the fridge for about 30 minutes.
- Then, after 30 minutes, shape the dough and place it in the tart mold already greased, and pork the shells with a fork. Then, in a preheated oven at 340F°, bake for about 20 minutes. Let it cool completely.
Pastry cream:
- Add 2 egg yolks, 2 tbsp of sugar, 1/2 tsp of salt, and 2 tbsp of cornstarch in a large bowl. Then, mix until smooth and combined. Set aside.
- In a saucepan at medium heat, pour 3/4 cup of full-fat milk, and 1/4 cup of whipping cream. Then, boil until it starts to simmer.
- Gradually, pour the milk and whipping cream into the yolk mixture and keep mixing to incorporate.
- Then, at low-medium heat, boil the combination until you get a thicker cream. Add 1 tsp of vanilla extract and mix well. And cool completely before use.
- Fill the shells with pastry cream and decorate with fresh fruit of your choice.
