Ingredients:
- 1 large onion
- 1 large leek
- 2 mediums potato
- 2 heads of garlic
- 1/4 cup of olive oil
- 1 tbsp of dry thyme
- 1 tbsp of rosemary
- 1 tsp of salt and 1 tsp of black pepper
- 2/3 cup of heavy cream
- 7 cups of chicken stock
- Fresh parsley for garnish

Method:
- Let’s begin by chopping 1 large onion, and a large leek on a chopping board.
- In a large pot, preheat 1/4 cup of olive oil. Then, at low heat, sweat the leek and the onion for about 10 minutes.
- While cooking, chop 2 heads of garlic and upload them to the pot.
- Then, add 2 diced potatoes, 1 tbsp of dry thyme, 1 tbsp of rosemary, and 7 cups of chicken stock, season with salt and pepper, and let to simmer for 15 minutes.
- After that, add 2/3 cup of heavy cream, and mix well until nicely combined. Then, blend all the ingredients together until smooth and creamy.
- Garnish with fresh parsley, serve it and enjoy
