Ingredients:
Tart Batter :
- 1 and half a cups of all-purpose flour
- 1/2 cup of almond powder
- 1/2 cup of unsalted butter
- 3 tbsp of sugar
- A pinch of salt
- 1 tsp of vanilla essence
- 1 large egg
Sweet lemon cream:
- 3 large eggs
- 3 egg yolks
- 1/2 cup of sugar
- 1/2 cup of lime juice
- Lemon zest of 2 lemons
- 1/2 cup of heavy cream
Method :
Tart Batter :
- Firstly, in a large bowl, add 1 and half a cups of flour, 1/2 cup of almond powder, and 1/2 cup of unsalted butter. Then, mix it all together.
- Next, upload 3 tbsp of sugar, a pinch of salt, 1 tsp of vanilla essence, and 1 whole egg. And mix all the ingredients until nicely combined.
- Keep mixing the dough and form it into a nice small ball. Then, cover it in a cling wrap, and refrigerate for about 30 minutes.
- On a clean surface, roll the dough to a suitable size, place it in a greased tart tray, cut out the extra dough with a rolling pin, and pierce it using a fork. Then, freeze for about 10 minutes.
- In a preheated oven at 340F°, bake the tart for about 12 to 15 minutes.
- Then, let it cool completely.
Sweet lemon cream:
- In a saucepan at low heat, add 3 whole eggs, 3 egg yolks, and 1/2 cup of sugar, and mix it well until sugar is dissolved.
- Then, upload 1/2 cup of lime juice, and lemon zest of 2 lemons. And mix it all together for about 1 minute or two.
- Remove from heat, and add 1/2 cup of heavy cream. Then, pour the cream on top of the tart, and bake at 340F° for about 10 minutes.
- Let it cool down completely. Then, squeeze it with whipped cream and refrigerate for about 30 minutes.
