The seasoning of eggplant :

  • 2 large eggplant
  • 1/2 tsp of black pepper
  • A pinch of salt
  • 2 tbsp of olive oil

The Tomato sauce :

  • 1 sliced onion
  • 4 cloves of garlic, finely chopped
  • 2 tbsp of olive oil
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 200g of pasta sauce
  • 3.5 tbsp of heavy cream
  • 1.5 tbsp of parmesan cheese powder, if you didn’t have one, replace it with 2 slices of cheese.

The Topping:

  • 1/2 cup of mozzarella cheese
  • Parsley

Method :

Cooking the eggplant :

  1. Firstly, cut your 2 eggplants diagonally, and season with a pinch of salt, 1/2 tsp of black pepper, and 2 tbsp of olive oil. Then, mix it all together to combine.
  2. Next, in a saucepan at medium heat, cook your seasoned eggplants until golden brown. Then, set aside.

Making the sauce:

  1. Start by slicing your onion, and chopping your 4 cloves of garlic.
  2. Then, in a saucepan, add 2 tbsp of olive oil, with 4 cloves of garlic, and cook for about 2 minutes.
  3. Add 1 sliced onion, season with 1 tsp of salt, and 1/2 tsp of black pepper, and stir until soft and tender.
  4. Next, add 200g of pasta sauce, 3.5 tbsp of heavy cream, and 1.5 tbsp of parmesan cheese powder. Then, please give it a good mix, and boil the sauce until cooked and creamy. Set aside.

Arranging the dish:
