Ingredients:
The Crust :
- 6 eggs at room temperature
- 200g of granulated sugar
- 1 tsp of vanilla powder
- 1 tbsp of instant coffee+ 1 tbsp of hot water
- 180g of flour
- 20g of unsweetened cacao
- 1 tbsp of baking powder
The Chocolate Whipped Cream:
- 1/2 cup of chocolate chips
- 2 cups of heavy cream
- 3/4 cup of granulated sugar
- 1 tbsp of unsweetened cocoa
The syrup:
- 2 tbsp of instant coffee
- 4 tbsp of hot water
The chocolate coffee cream :
- 1/2 cup of chocolate chips
- 1/4 cup of hot coffee

Method :
Making the crust :
- Firstly, in a large bowl, add 6 eggs, 200g of granulated sugar, and 1 tsp of vanilla powder. Then, beat at high speed until doubled in size.
- Next, mix all together 1 tbsp of instant coffee and 1 tbsp of hot water, add them to the egg mixture, and mix until well incorporated.
- Then, sift and add gradually the dry ingredients (180g of flour, 20g of unsweetened cocoa, and 1 tbsp of baking powder), and whisk gently using a spatula until nicely combined.
- In a pan (38×26 cm) lined with parchment paper, pour your batter and flatten it well.
- In a preheated oven at 325F°, bake your cake for about 8 to 10 minutes.
- Remove from the oven, and let it cool slightly. Then, trim the uneven edges of the cake sheet, and cut it into 3 equal parts.
Making the chocolate whipped cream:
- Firstly, melt 1/2 cup of chocolate chips. Then, in a large bowl, add 2 cups of heavy cream, and 3/4 cup of granulated sugar, and beat them until creamy and smooth.
- After that, add your already melted chocolate, and 1 tbsp of unsweetened cocoa, and mix well until nicely combined, you will get a creamy and nice cream. Then, pour your chocolate whipped cream into the piping bag.
- Next, brush your crust fully with your prepared syrup. Then, for the first layer, spread the chocolate whipped cream evenly and smooth the surface. Repeat with the other two layers. Refrigerate for about 3 hours.
Making the chocolate coffee cream:
- Add 1/2 cup of chocolate chips and 1/4 cup of hot coffee in a small bowl. Mix all together until melted and smooth.
- Then, trim the sides of your cake, and pour it over the chilled cake evenly.
- Refrigerate your cake for about 30 minutes before cutting it. Soak your knife in hot water and dry it with a paper towel before cutting for a smooth, clean cut.
- Finally, you can decorate with whatever you want, serve, and enjoy with your family!
