Ingredients :
- 1 large eggplant
- 1 medium onion
- 2 potatoes
- 1 broccoli
- 2 zucchini
- 2 bell peppers
- 2 carrots
- 1 tsp of salt
- 1 tsp of black pepper
- 4 cloves of garlic
- 1 tbsp of lemon juice
- 1 tsp of onion powder
- Parsley
- 2 tbsp of olive oil
- 2 tbsp of parmesan cheese
- 170g of breadcrumbs
How To Make Perfect roasted veggies:

- Firstly, cut all your organized veggies into small pieces around the same size. (You can also add chicken, and cut it into small pieces)
- Then, put all your veggies in a large bowl, and add 1 tsp of salt, 1 tsp of black pepper, 4 cloves of garlic, finely chopped, 1 tbsp of lemon juice, 2 tbsp of olive oil, 2 tbsp of parmesan cheese, and 170g of breadcrumbs.
- Now, toss and mix all the ingredients together until all your veggies are coated and well-seasoned.
- In a baking tray lined with parchment paper, line your veggies but don’t overcrowd them. And drizzle on top olive oil so it helps transfer the heat to the bottom of the vegetables to get a nice roasted veggie.
- In a preheated oven at 370F°, bake your veggies for about 25 to 30 minutes.
- Then; put your roasted veggies on a plate with fish or meat, or whatever you prefer, drizzle some olive oil, add salt for taste, and some parsley on top. And here are our roasted veggies ready.
- Finally, serve and enjoy.
