Ingredients:
The poached eggs:
- 5 large fresh eggs
- 2 cups of hot water
- A pinch of salt
- 1 tbsp of white vinegar
The sauce :
- 1 tbsp of soy sauce
- 1 tbsp of balsamic vinegar
- A pinch of salt
- 1/2 tsp of sesame oil, or olive oil
- 1 or 2 tbsp of green onion
- 3 tbsp of boiled egg water
Directions:
Making the Poached eggs :
- Firstly, add your 5 eggs in a large bowl, add a pinch of salt, and pour some water to clean carefully the dirt on the surface of the eggs.
- Add nearly 3 to 4 inches of water to your pot, heat the pot of water on high, cover it with a lid, and bring it to a boil.
- Then, crack your eggs into a fine mesh sieve, swirl it, remove the liquidy egg white, and transfer it into a small bowl.
- Now, reduce the heat to low, wait until the water is not bubbling, add 1 tbsp of white vinegar, and create a vortex. Then, drop your egg slowly in the middle.
- After you see the eggs set, cover and simmer for about 2 minutes. Then, you will notice that your eggs are completely solidified. And if you are into medium-cooked eggs, cover again and cook for about 3 minutes.
- Then, turn it over, turn it off, and prepare a sauce to serve with these fragrant poached eggs.
Making the sauce:
- In a medium bowl or plate, add 1 tbsp of soy sauce, 1 tbsp of balsamic vinegar, a pinch of salt, 1/2 tsp of sesame oil, 2 tbsp of green onion, and 3 tbsp of boiled egg water, stir well to combine.
- Then, add in your boiled poached eggs, and here are your poached eggs ready to eat.

Tips:
- If you want to get a perfect poached egg, just have the freshest egg possible those that have a rough surface that will help you to get a more spherical round form of your eggs, with no foam, and not having white wispies.

- To ensure you get a perfect poached egg, crack your eggs into a fine mesh sieve in order to remove any liquidy egg white.
- Adding salt to boiled water will just create whiter wispies, and splayed the egg white all out because adding salt to water changes the density of the water.
- If you have any leftover white wispies still attached, you can remove them by using kitchen scissors.
