- 1 cup of uncooked basmati rice
- 2 tbsp of unsalted butter
- 1 pound of medium shrimp, peeled and deveined
- 2 cloves of garlic, finely chopped
- 1 diced onion
- 1 diced red bell pepper
- 1 tbsp of freshly grated ginger
- 2 tbsp of red curry paste
- 1 can of unsweetened coconut milk
- 3 cups of vegetable stock
- 1 tbsp of lemon juice
- 2 tbsp of chopped fresh cilantro leaves

- Firstly, in a large saucepan at medium heat, boil 2 cups of water, and add basmati rice. Then, cook according to package instructions. Set aside.
