Ingredients:

  • 1 lb of shrimp, peeled
  • 2 tomatoes, grated
  • 1 small onion, finely chopped
  • 4 cloves of garlic, finely chopped
  • Salt and pepper to taste
  • 2 tbsp of olive oil
  • 1 tbsp of paprika
  • ½ tsp of ginger
  • 1 bay leaf (optional)
  • 1 tbsp of cumin
  • 1 tbsp of fresh parsley, finely chopped
  • 1 tsp of tomato paste
  • Lemon wedges for garnish(If desired)

How to make the best shrimp tagine recipe:

  1. Firstly, wash the shrimp under the water, and remove the head, legs and shells (tails if you desire).
  2. Peel and grate the tomatoes and set aside.
  3. In a medium tagine at low heat, add 2 tbsp of olive oil, and 1 small onion. Then, sauté for about 5 minutes or until the onion is soft.
  4. Add 4 cloves of garlic for 1 minute or until fragrant.
  5. Then, add the grated tomatoes, salt and pepper to taste, 1 tbsp of paprika, ½ tsp of ginger, 1 tbsp of cumin, 1 tsp of tomato paste, and 1 bay leaf. Mix all the ingredients to combine. Cover and allow the tagine to simmer for about 30 minutes or until the sauce is done.
  6.  Now, add the cleaned and peeled shrimp to the tagine, with a few tbsp of water and cover.
  7. Cook the shrimp for 30 minutes, or until all done. (Check from time to time).
  8. Once cooked, remove the tagine from the heat and garnish with fresh parsley, and a drop of olive oil.
  9. Serve tha tagine with Moroccan bread (KHOBZ), or whatever you prefer.

  1. Are you sure it takes 30 to cook shrimp? Or do you like your shrimp over-cooked and rubbery?

    1. For me it’s perfectly done! It all depends on the shrimp size, tagine cooking, and the minimal application of heat! And as you said I like over-cooked shrimp!
