Making the Chicken :

  1. Firstly, in a large bowl, add 2 cups of shredded chicken breast, 1/2 tsp of cumin, 1/4 tsp of cayenne, 1/2 tsp of garlic powder, 1/2 tsp of onion powder, 1/2 tsp of oregano, 1/4 tsp of salt, 1/4 tsp of ground black pepper, and 1 cup of Monterey cheese. Then, mix it all together to combine.
  2. Then, fill your tortilla shells with 1/4 cup of the chicken mixture, and roll the tortilla up. Repeat the process until you finish all of your mixtures.
  3. In a greased 9×13 baking dish, place your tortilla shells. And start making your sauce.

Making the white sauce:

  1. In a large saucepan at medium-high heat, melt 2 tbsp of butter, once melted, add 2 tbsp of flour and mix until incorporated.
  2. Then, add 4 cups of milk, 1/2 tsp of salt, and 1/4 tsp of black pepper, and whisk until the mixture is thick.
  3. Next, add 3/4 cup of sour cream, with 1 cup of mozzarella cheese. Then, mix it well until creamy and smooth.
  4. Now, pour evenly the white sauce over the prepared tortilla shells. Then, top with some mozzarella cheese on top.
  5. Then, in a preheated oven at 350F°, bake your dish for about 15 to 20 minutes, or until golden brown and the cheese is melted.
  6. Finally, serve and enjoy.
