  • 1 lb. raw shrimp, peeled and deveined
  • 4 cups fresh corn kernels (about 4 large ears of corn)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or seafood broth
  • 2 cups water
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1/4 cup chopped cilantro for garnish (optional)


  1. Firstly, heat the olive oil in a large saucepan over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the paprika and cumin, and cook for another minute.
  4. Then, add the corn, broth, and water to the saucepan and bring to a boil.
  5. Reduce heat to low and simmer for 10 minutes.
  6. Then, add the shrimp to the soup and cook until they are pink and cooked for about 5 minutes.
  7. Season the soup with salt and pepper to taste.
